Ingredients
1 package (11 ounces) Al Fresco® sweet Italian style chicken sausage, casings removed and sliced ½-inch thick crosswise
4 boxes (8.25 ounces each) Kitchen Basics® original chicken bone broth
1/2 (8-ounce) box Banza® rigatoni made from chickpeas
1 package (10 ounces) Wholesome Pantry™ organic zucchini noodles
2 cups packed Earthbound Farms spinach/arugula blend
Grated Parmesan cheese for garnish (optional)
Directions

1. Heat large saucepot over medium-high heat; spray with cooking spray. Add sausage; cook and stir 5 minutes or until golden brown. Add broth and rigatoni; heat to a simmer. Cook and stir 4 minutes. Add zucchini noodles; cook and stir 5 minutes or until pasta is al dente and noodles are tender. Stir in greens; remove from heat. Makes about 6 cups.

 

2. Serve soup sprinkled with cheese, if desired.

 

Chef Tip: Customize this dish by swapping the chicken sausage with Beyond Meat® plant-based sausage, bone broth with vegetable broth and/or rigatoni with butternut squash noodles.
